I fanwank they just ran out of space on the government form, since all three fields of Daniel's study are represented on this chart. I doubt Daniel went back to school after his descension (he was slightly dead, er, ascended, at the time). He likely had all three before he joined the Stargate program.
According to Joe Mallozzi, he asked Michael Shanks about Daniel's field of study to ensure he got it right in the script. Before that, fanon just kind of went with logic and/or used the novelization of the Stargate movie. I've also been advised by people IN this field of study, that Archeology PhD programs are often a subdivision of Anthropology. Philology may be a related degree as well.
The definitive line was spoken by Shen Xioayi in 9.17 "The Scourge" (and since Daniel did not correct her, presumably he did it because she was correct and not out of politeness).
