I think you have an excellent handle on Sam. For example, your AU fic, String Theory, although not canon Sam is still very recognizable and IMO, very much the Sam character to the core - in terms of repressed emotion and how she deals with her personal life. I know she has a different backstory, but to me, she was still Sam and her actions and thoughts rang true.
